There’s nothing better than enjoying a nice cool treat in the middle of summer. Cake and cupcakes can be heavy or too dense for a treat on a hot day, but pudding … it’s perfect! The light, cool and creamy texture will make your taste buds smile. What are you favorite treats to enjoy in the summer months?
- · ½ cup Coach’s Oats®
- · 1 cup white whole wheat flour
- · ¾ cup extra virgin olive oil (or canola oil)
- · ¼ cup brown sugar
- · ¼ tsp. salt
Homemade Dark Chocolate Pudding
- · ⅓ cup raw cane sugar
- · 4 Tbsp. cornstarch
- · 1 Tbsp. + 1 tsp. dark cocoa powder
- · ⅛ tsp. fine sea salt
- · 2 cups soy milk (or milk of choice)
- · 1 tsp. pure vanilla extract
Preheat oven to 350°.
Combine all the ingredients for the crust in a large bowl and mix until mixture reaches a crumbly consistency. Pour mixture into a well-greased 8-inch baking dish and bake for 20 minutes.
Combine sugar, cornstarch, cocoa powder and salt in a large saucepan on medium heat. Slowly add in milk, whisking constantly to avoid lumps. Reduce heat and cook until it thickens, stirring occasionally. Remove pudding from heat and stir in vanilla. Pour pudding over crust and refrigerate until firm (at least 6 hours).
