Everyone loves cookies, but with Father's Day on Sunday it's time we "manned-up" the usual oatmeal cookie. What's bolder, tastier and better than bacon? This cookie is delicious and subtle enough for even the wariest of tastebuds. Happy early Father's Day to all the wonderful dads out there
Maple Bacon Oatmeal Cookies
- · 1 cup Coach’s Oats®
- · 2 cups white whole wheat flour
- · ½ tsp. baking soda
- · ½ tsp. salt
- · 1 cup pure maple syrup
- · 1 cup unsalted butter
- · 1 egg yolk
- · 1 tsp. vanilla
- · ½ cup bacon, cooked and crumbled
- · ½ cup chopped pecans
- · ¼ cup dark chocolate chips
Preheat oven to 350°.
Beat syrup and butter together. Beat in egg yolk and vanilla.
In a separate bowl mix flour, oats, baking soda and salt. Stir wet mixture into the dry. Fold in bacon, nuts and chocolate chips. Chill dough for 20 minutes in the freezer. Drop rounded tablespoon sized. balls on ungreased cookie sheet and flatten slightly. Bake for 15 minutes or until golden brown. Print this recipe.
