Summertime Oatmeal

Nothing says summer like a bowl of oatmeal … not! If a warm bowl of oatmeal isn’t the first thing that comes to mind on a hot sunny morning, then we have the perfect summer oatmeal flavors for you (you can always enjoy the oats cold too: Overnight Oatmeal 2 Ways). Bonus! Oatmeal is a perfect guilt-free breakfast for bathing suit season J. How do you enjoy your oats in the summer months?

Banana Split Oatmeal
  • ·         1 banana
  • ·         ¼ cup Coach’s Oats®
  • ·         ¾ cup water
  • ·         Cherries, fresh or frozen
  • ·         6 oz. plain Greek yogurt (we used Chobani®)
  • ·         Vanilla
  • ·         Honey
  • ·         Dark chocolate chips
  • ·         Sprinkles

Preheat oven to 400°.

Roast banana (peel and all) in oven for 15 minutes. Prepare oats and water as usual, microwave or stovetop method. I used the microwave for 4 minutes at 70% power. Mix vanilla (about ½ to ¾ capful) and honey in yogurt, to your desired sweetness/flavor.

Carefully cut the banana in half lengthwise and remove from peel. Top oatmeal with banana, yogurt, chocolate chips, cherries and sprinkles, of course! Print this recipe

Coconut Lime Oatmeal
  • ·         ¼ cup Coach’s Oats®
  • ·         ¾ cup water
  • ·         1 lime
  • ·         Coconut flakes
  • ·         Honey or sweetener of choice
  • ·         Coconut butter

Combine water and oats in a microwave-safe bowl. Add 1 Tbsp. (or more if you prefer more lime flavor) lime juice. Microwave as usual. I did 4 minutes at 70% power. Top oatmeal with sweetener, coconut flakes, lime zest and coconut butter. Print this recipe
