Savory Oatmeal Series: Eggs Benedict Oatmeal

Typically a calorie-indulgent breakfast, eggs Benedict is a meal that usually is saved for special occasions. Time to change that!

Just like using your fine china for more than just holidays, you can indulge your taste buds with their favorite flavors more often. Enjoy our healthful oatmeal twist on a traditional breakfast favorite.

Eggs Benedict Oatmeal
  • ·         ⅓ cup Coach’s Oats®
  • ·         1 cup water
  • ·         1 slice Canadian bacon
  • ·         Handful of spinach (or any green of your choice)
  • ·         1 egg
  • ·         1 wedge Laughing Cow® Light Creamy Swiss Cheese
  • ·         2 tsp. non-fat milk (optional)
  • ·         Dash or two of hot sauce

Prepare oats as directed on package (I prepared in the microwave).

In a small pot, bring water to a boil, gently add the cracked egg. While the egg cooks, heat bacon in a small pan until browned and crisped on both sides; set aside. In the same pan, sauté greens (egg should take about 3 to 5 minutes, or until the whites have cooked).

Melt cheese and milk in a microwave for 20 to 30 seconds (you don’t want the mixture too runny). Sprinkle with hot sauce and mix well.

Top oatmeal with greens, bacon, egg and drizzle with cheese sauce (add a sprinkle of paprika to make it fancy). Print this recipe
