We’ll get to our Easter candy in a minute, but first an oatmeal bunny bowl.
Who doesn’t love the Reese’s® Peanut Butter Eggs? I think they’re better than the regular cups.
Chocolate Baked Oatmeal Peanut Butter Cups
- · 4 cups Coach’s Oats®
- · 1 Tbsp. baking powder
- · 1 banana, mashed
- · 2 cups unsweetened applesauce
- · 2 Tbsp. honey
- · 1 tsp. vanilla
- · 2 eggs
- · Pinch of salt
- · 1 cup fat free milk (any milk of your choice)
- · ¼ cup + 1 Tbsp. cocoa powder
- · ⅓ cup peanut butter (we use Laura Scudders)
- · 1 Tbsp. powdered sugar
Preheat oven to 350°.
In a large bowl combine eggs, vanilla, applesauce, banana, honey and cocoa powder.
Mix in oats, baking powder, salt and milk until well combined. Pour batter into lightly greased muffin tins.
In a separate bowl mix peanut butter and powdered sugar. Drop ½ tsp. scoops in the middle of each cup. Bake 18 to 20 minutes until oatmeal has set.
No bunny does oatmeal like Coach’s Oats!
