These cold
winter days have us dreaming of warm summer sun and bright long days. We may
not be able to change the temperature outside, but we can trick our taste buds with
tropical flavors.
Tropical
Chewy Oatmeal Bars
- · 2 cups Coach’s Oats®
- · ¼ cup coconut butter (not oil)
- · ¼ cup honey
- · ¼ cup brown sugar
- · ½ tsp. vanilla
- · ½ tsp. salt
- · ¼ cup dried mango, chopped
- · ¼ cup dried pineapple, chopped
- · Coconut flakes for topping
Preheat oven
to 300°.
In a saucepan
over medium heat, combine coconut butter, honey and brown sugar. Cook until
mixture bubbles and reduce heat. Cook for 2 minutes. Stir in vanilla and salt.
In a separate
bowl combine oats and dried fruit. Add honey mixture to oats and fruit, and mix
well. Pour into a greased baking pan (a small jelly roll pan works well) and
top with coconut flakes. Bake for 10 minutes.
Remove from
oven and cool at room temperature for 2 hours. Cut into bars and enjoy. Print this recipe
