The weather
is cooling off and nothing makes a home feel warmer or smell yummier than fresh
baked goods. What better way to kick off the baking season than with the
flavors and aromas of fresh baked oatmeal cookies? To make things even cuter,
use the dough and bake in a mini muffin tin (beware: they are addicting).

½ cups Coach’s Oats®

¼ cups white whole wheat flour

tsp. baking soda
·
¼
tsp. baking powder
·
¼
tsp. salt
·

Tbsp. butter, melted
·

cup brown sugar
·
½
cup granulated sugar
·
1
egg
·
½
cup unsweetened applesauce
Preheat oven
to 350°.Whisk together oats, flour, baking soda, baking powder and salt in a medium bowl. In a separate large bowl combine butter and sugars with a wooden spoon. Once mixed, add applesauce. Mix in dry ingredients.
Scoop batter
into lightly greased mini muffin tins and bake 8 to 10 minutes or until golden
brown.
Allow minis
to cool 5 minutes in the pan, then transfer to a wire rack to cool completely.
Once cooled,
dip each bite top into the icing (recipe below).
Icing

cup powdered sugar

Tbsp. fat-free evaporated milk (adjust amount to reach preferred icing consistency)
