It was brought to my attention that earlier this week
Was the birthday of Dr.Seuss, a king and master of rhyming technique
We couldn’t let this day pass without a celebration
So what better way to honor him than in a blog that mimics his narration
Although it may be late and some would say belated
A birthday wish is a birthday wish no matter when it’s stated
So grab your oatmeal and some ingredients listed below
And you’ll enjoy a tasty cake without any baking, wouldn’t you know
You can enjoy it at a table and sitting in a chair
You can enjoy it over here or there or anywhere
It’s a breakfast fit for a celebration, even for a who

Birthday Cake Oatmeal

• ⅓ cup Coach’s Oats®
• 1 cup water
• 1 scoop vanilla protein powder
(Trader Joe’s vanilla works perfect here)
• dash of pure sugar
Frosting:
• 1 Tbsp. Mascarpone cheese
• ¼ cap full pure vanilla extract
• 3 to 4 frozen strawberries, defrosted w/sauce
• dash of powdered sugar
• optional: dark chocolate chips
Cook oatmeal as directed. Mix in protein powder and sugar to cooked oatmeal.
To prepare frosting: In a separate bowl, whisk together cheese and vanilla. Cut strawberries in half or quarters and mix berries with juice into frosting. Finish by mixing in a dash of powdered sugar. Top oatmeal with frosting and dark chocolate chips, nuts or sprinkles. Print this recipe
